December has arrived and the holidays are in full swing. We’re wearing our scarves and boots and warm winter coats. We’re making Christmas cards and hanging stockings. We’re taking to the town with our shopping lists in one hand and hot, steaming seasonal coffee shop beverages in the other.

In light of all this holiday cheer, here is one splendid coffee-shop inspired Christmas cookie recipe. These cookies are packed full of Christmas splendor. This simple shortbread is tender and buttery, full of chocolate and coffee flavor, and topped with an easy mocha glaze and crushed peppermint. You’ll absolutely want to add these to your Christmas baking list. They travel and package well for food gifts, too, for all the holiday-coffee-lovers in your life.

Peppermint Mocha Shortbread Cookies

Ingredients

    • 18 Tablespoons (2-1/4 sticks) butter, softened
    • 3/4 cup sugar
    • 1/3 cup cocoa powder
    • 2 cups flour
    • 1 Tablespoon finely ground coffee/espresso
    • 1/4 teaspoon salt
    • 1/2 teaspoon baking soda
    • 1 teaspoon baking powder
For the Glaze/Topping:
  • 2 Tablespoons cocoa powder
  • 1-1/2 cups powdered sugar
  • 1/4 cup hot brewed coffee
  • 1 teaspoon vanilla
  • 2/3 cup crushed candy canes

Instructions

  1. Preheat oven to 325. Line 2 large cookie sheets with parchment paper.
  2. In the bowl of a stand-mixer fitted with the paddle attachment, cream the butter and sugar. Beat in the cocoa, followed by the flour, ground coffee, salt, baking soda, and baking powder. The mixture will be crumbly at first. Scrape the sides and bottom of the bowl and continue beating until it all comes together.
  3. Using a small cookie scoop or teaspoon, scoop the dough into equal-sized portions and roll them into a ball. Slightly flatten each ball into a disc-like shape (because they don’t spread out on their own much – I used the back of a spoon for this) and place on the baking sheet. Bake for 13-15 minutes, or until set and cracked on top, but still soft. Allow the cookies to cool on the pan for about 5 minutes before moving them to a cooling rack to cool completely. Place the cooling racks over parchment paper or newspaper to catch the glaze.
  4. To make the glaze, put a small saucepan over medium heat. Whisk together the cocoa, powdered sugar, hot coffee, and vanilla until the mixture is smooth and well combined. Set aside to cool for about 10 minutes while the cookies finish cooling.
  5. Using a teaspoon, spoon the glaze onto the center of each cookie, allowing some of it to drizzle over the sides. Immediately follow with the crushed peppermint (don’t wait too long or the glaze will set and the peppermint won’t stick). Repeat with remaining cookies. Allow glaze to set about 30 minutes before serving/storing. Makes 3-4 dozen small cookies.

5-Alarm Spicy String Beans

These spicy green beans are a wok favorite around the Lil Blue Boo house. I serve them with Trader Joe’s jasmine rice (cooks in 3 minutes in the microwave) and it’s a super fast dish to prepare for a vegetarian meal!

Ingredients:
2 to 3 cups of green beans
1 tbsp sesame oil
1 tbsp vegetable oil
1 tsp soy sauce
1/2 tsp chili oil
1/2 tsp of red pepper flakes
1 tbsp of any Asian sauce that has ginger and rice vinegar in it (I use a Gyoza dipping sauce from Trader Joe’s)

Southern Style Vinegar-Based Pork BBQ (Slow Cooked)

This is a combination of about 5 different recipes plus a few of my own additions based on how I remember my favorite Spoon’s BBQ in North Carolina! Make sure to set aside a long period of time for the slow cooker….it takes about 9 hours total.

 

Ingredients:
4 lbs of pork roast (or I use 2 2lb pork roasts)
2 white or yellow onions
2 cups of apple cider vinegar
2 cups of apple juice
1 tsp of liquid smoke
1 tsp crushed red pepper flakes
1/2 tsp cayenne pepper
2 tsp brown sugar
1/2 a bottle of regular/classic BBQ sauce (about 9 oz)

Gicela’s Spicy Chicken Soup

Gicela is one of our Lil Blue Boo helpers and we have recently discovered that she is an amazing cook! The last few Friday’s she’s taken a break from sewing to make us a huge pot of her spicy chicken soup for lunch! Gicela cooks without measuring so Lisa took notes yesterday so we could share the recipe:

To make the soup you’ll need:
2 chicken breasts
1 onion
2 large tomatoes
2 jalapeno peppers
1 handful of small carrots
1 handful of broccoli
2 potatoes
1 1/4 cup rice
1 1/4 cup barley
Chicken flavor bouillon
Garlic salt
Salt and pepper


Cut chicken (2 breasts) into cubes and add salt, pepper and garlic salt to taste, mix.


Coat bottom of pot with vegetable oil and heat up. Add chicken, cover (any oil that settles on top of soup can be removed at the end).


Add one sliced onion to chicken, cover.


Once chicken is cooked thoroughly, add water – fill to about the middle of the pot, boil.



Some chicken fat will form on top of soup from the chicken – you can remove this with a small ladle:


Add 2 chopped tomatoes and 2 sliced jalapeno peppers once the water begins to boil.



Add chicken flavoring and more salt. Let boil for 5 minutes


Add barley, boil for 5 min. Add washed white rice, let boil another 5 min.


Slice potatoes.


Add potatoes and carrots to soup.


When the barley and rice are fully cooked, add the broccoli.


Enjoy!

I did two projects for this week’s S.Y.T.Y.C. contest entry and had my friends vote on which I should submit…..this was the winner, but I chose the other project instead…..hope I’m not sorry in a week! I’m completely in “gift” mode right now…..and I think this belt would make a great gift for a little girl or boy depending on which kind of plastic you used. It is a very sturdy, functional belt. It would even make a cute dog collar!

I seriously had to eat 4,000 Starbursts and drink 5 2-liter bottles of Diet Orange Crush for this project…but happy to do it!

Step 1: Collect different types of plastic….candy packages, soda labels, etc. You will also need several plain white plastic grocery bags (or partially white).

Step 2: Cut the plastic grocery bags into 4″ strips. These are going to form a plastic base for your belt.

Step 3: Create a “sleeve” using parchment paper. (You can also use freezer paper but see directions here) Lay the grocery bag strips on one side of the parchment paper, several strips thick, overlapping them slightly.

Step 4: Close the sleeve carefully. Iron (no steam, medium setting) along the freezer paper sleeve to melt the bags together. You’ll have to do this for about a minute…. keeping the iron moving slowly at all times. Let your sleeve cool. This is important because plastic tends to curl when it cools. The white plastic grocery bags tend to shrink considerably so check for “voids” or holes..this means your heat setting is too high.

Step 5: Cut your decorative plastic (i.e. the candy packages or soda labels etc) into 1″ x 4″ strips.

Step 6: Lay your first strip at an angle, close the sleeve and iron to fuse it to your bottom white layer……

……after removing the iron I placed a heavy coffee table book on top of the sleeve to make sure the plastic cooled flat.

Step 7: Repeat this process for each 1″ plastic strip, alternating designs as you go and overlapping each piece over the previous by 1/8″ to account for shrinking. REpeat until the entire length of plastic is covered.

Step 8: Cut a piece of cotton canvas webbing the length of your belt. Trim your fused plastic piece to be the same width as the webbing.

Step 9: Sew the fused plastic piece to the webbing 1/8″ from the edge all the way around.

Optional Step: Since my belt used “D” rings, the webbing would show when the belt was fastened. I took two of the trim scraps and fused them together to create a piece large enough…….

……to sew to the back of the belt on the end that threads through the “D” rings.

Step 10: Zigzag all of the belt edges.Place your D rings on one end of the belt and fold your belt end back. Sew the fold closed. You may have to use a zipper foot here if your D rings get in the way (I had enough room and was able to use the regular foot).
